Chicken Soup!!!

 

On Twitter I saw Kirstie Allsopp was talking about chicken soup, it got me thinking, I love Chicken Soup and being the giver that I am this is my gift to you, its fab and everyone I have made it for says the same (Ask any of the girls at my Slimming World Class in Bream, Gloucestershire). I always make this soup to use up the leftovers from a roast chicken; you can use boneless chicken but you need to put in a lot more flavour than this way by using good chicken stock. I find this soup lasts about 3 days in the fridge; I have tried freezing this but it has always split.

INGREDIENTS

1 Whole uncooked chicken

1 Large Onion

2 Small Potatoes

1 Chicken OXO Cube

½ pint Skimmed milk (ish)

METHOD

Start by roasting your chicken; I use an enamel roasting tin and cook my chicken in about an inch of water when I am making soup as then you do not have to add any more liquid.

When the chicken is cooked remove from the tin and allow resting; transferring all the liquid to a saucepan (there may not be that much of it but the chicken will taste fab too!).

Carve the chicken putting the bones back into the stock – don’t carve it too well as there will not be enough meat for the soup – as a rule of thumb I remove the breasts, legs and large pieces of meat and then everything else goes in the pot.

Cover and cook on the hob on a medium high heat for about 15 minutes or until the chicken is falling off the bone, now you need to sieve the stock into another pan and then wait for the chicken to cool – it burns fingers otherwise!

While waiting for the chicken to cool peel and chop the onion and potatoes into dice size cubes.

Remove all the chicken from the bones and add to the stock with the onion and potatoes, add salt and pepper to taste along with a chicken stock cube and a little more water. Cover and simmer until the potato is soft.

Remove from the heat and allow to cool and then liquidize adding the milk as you go along. You can add as much or as little milk as you like but remember the more milk you add the more dilute the flavour becomes.
